Our Professional Chefs decided they would like to make:Blueberry Cheesecake!
The butter was a little icky and took a while to drop in, but we didn’t mind… ;o)
Adding the cream cheese and creme fraiche and trying to mix it together was lots of work, but we all took turns and did it!
But crushing the oat cookies was ABSOLUTELY the best part! We tried crushing ourselves, and then with all our friends. We continued until the cookies were crushed into bits of pieces!!
We love putting the recipe together ourselves…Some of us had all the ingredients while some us preferred only one or two of the ingredients.. ;-D
Blueberry Cheesecake Serves: 4
- 1 lb blueberries
- 2 tbsp super-fine sugar
- 8 oz cream cheese
- 1 cup creme fraiche
- 1/4 tsp vanilla extract
- 8 oat cookies, crushed
1. Place 3/4 of the strawberries and 1/2 of the sugar into a small saucepan. Cover and simmer for five minutes until soft. Stir in the other berries and leave to cool.
2. Using a wooden spoon, beat the cream cheese, creme fraiche, remaining sugar, and vanilla extract together in a mixing bowl. Continue until well mixed and soft.
3. Fill Four glasses with a spoonful of the blueberry sace, then a spoonful of the cream cheese mixture, and then a spoonful of crushed cookies.
4. Repeat the layers once more and then put the filled glasses in the fridge for an hour.
