Since we were introduced to cracking a coconut we wanted to find a recipe that had coconut!
Our favorite we found was Coconut Rice!
In order to prepare this recipe we had to use the stove most of the time, but the children took part in this as much as they could!
They measured out the coconut oil…..
Measured out the proper amount of rice…..
After adding all the ingredients into the pot we set a timer on for 20 minutes and waited in our classroom until our rice was ready….
Prep Time: 10 minutes
Cooking Time: 30 minutes
Yield: Six ½-cup servings
1 tablespoon coconut oil
1 cup jasmine rice
1 1/2 cups Silk Pure Coconut Original Coconut Milk
1/2 teaspoon salt
Toasted coconut flakes, to serve
Heat oil in a medium saucepan over medium heat. Add rice and cook for 2 minutes. Add coconut milk and salt and bring to a boil. Stir, reduce heat to a simmer and cover. Cook for 20 minutes. Remove from heat and let sit for 10 minutes. Fluff with a fork, garnish with toasted coconut and serve.
