Chocolate Chip Muffins

This week we had the help of some of the older kids to help make chocolate chip muffins from scratch.

We love to look at the butter after it is melted…

We decided to make 2 separate batches so we could have enough for all of us!
 We love cracking the eggs because we are becoming experts at it! ;-D

Putting chocolate chips in is the best part because they look so yummy to us….

 Chocolate Chip Muffin

  • 1/2 cup superfine sugar
  • 4 oz. butter
  • 2 3/4 cups flour
  • 1 tsp baking powder
  • 2 eggs beaten
  • 5 fl oz. milk
  • 1 tsp vanilla extract
  • 1 1/4 cups chocolate chips

Whisk the butter and sugar until fluffy. Still whisking, add the eggs one at a time. Add the vanilla extract and milk. Fold in the flour and a teaspoon of baking powder to make thick batter. Add the chocolate chops. Spoon the mixture into 23 paper muffin cases in a muffin pan. Bake for 30 min.   Preheat over 300 F.
