Next on the Menu: Carrot Soup!
We were inspired to find a Carrot Soup recipe, because this was something the children came up with in the book they created after visiting the Arboretum. The name of the book is I see the Animals. All of the chidren worked together to create this story. On some of the pages created, the children spoke of how the animals made carrot soup and ate it for dinner! So we thought we would see if there was such a thing and give it a try!!! ;-D
We were in luck! We found the recipe, got our ingredients, and got to work!

The chilren are learning so much from cooking each week. They are learning more about where the food comes from, and understanding more concepts about cooking. We encourage you to cook our recipes at home with your children! Below is our tasty Carrot Soup Recipe………….
- 6 carrots peeled and sliced
- 2 cloves garlic,peeled
- zest of 1 orange,grated
- juice of 1 lemon
- 1 1/2 cups(300 ml) water
- pinch of ground nutmeg
- 1 1/2 cups(300 ml) orange juice
- 1 1/2 cups (300 ml) light cream
Put the carrots, garlic, zest, orange juice and water in a pan. Cover and simmer for 20 minutes until the carrots are soft. Let the soup cool, then add nutmeg and lemon juice. pour into a blender and blend until smooth. Return the soup to the pan, stir in the cream, and season with pepper. Then reheat the soup without letting it boil.
